NFPA 96 Information
The NFPA (National Fire Protectional Association) 96 standard established minimum frequencies for the inspection of systems. Based on the type or volume of cooking the inspections may be required more often.
By the standard a low-volume cooking establishment should be at least inspected & cleaned annually. High-volume operations such as fast food, charbroiling or solid fuel cooking operations may require more frequent maintenance. Depending on the operation it may be monthly or even weekly.
If the system is found to be contaminated the entire exhaust system shall be cleaned.
This maintenance routine will increase if use increases, to ensure safety and efficiency.
HCA will supply you with a “Certificate of Performance.” NFPA codes require this Certificate is posted near the hood, much like the tag on your fire system. The Certificate should state the date the system was cleaned and expiration date, and note if there are inaccessible areas in the system.

The Phil Ackland Kitchen Hood Cleaning School program is based on the NFPA-96 standard. The program is developed to train professionals on the cleaning of commercial kitchen exhaust hoods to be in compliance with the laws and regulations for the appropriate jurisdiction.
